Nice Job, I completely agree.
Expecially about the first 5 points: not knowing about market, recipes costs, inventory, etc. and without monitoring results can be fatal today… just like driving without eyes.

great stuff as always.Especially setting an example for your staff. I did my “apprenticeship” with a group of Irish bar owners in the Bronx-the one practice they all observed was paying for their drinks as well as any drink they bought for others-they instilled in me a discipline that served me well when I opened my first store
