I’m just back from the Irish Pubs Global Inaugural Conference which took place in Galway, the west coast of Ireland over the last week. Details here at their website, I recommend you check them out.

Now what a conference it was. It brought together Irish Pub owners from around the world, from places as far away as Dubai, Belgium, Scotland, United Kingdom, United States, Australia, Uganda, France…amazing places you’d never think there were Irish Pubs but every corner you turn you’re going to find another Irish Pub somewhere. But what this conference did was it brought together all these bar owners, these Irish Pub owners under one roof. For the first time really and a bit of the conference that I was allowed to be a part of, I was allowed to be speaking at the conference on the topic of how to use social media to fill your bar.

But the three big take-aways I got from this conference, and there were some amazing speakers and we had some great times and great connections were made over the few days there, but three big take-aways for me, the first one was from Dave Magrogan. Now Dave Magrogan is a motivational speaker, he runs Irish Pubs, he is a former chiropractor, an amazing guy and he runs a motivational company called Rhino Living and he also runs Kildare’s Irish Pubs. Rhino living is a concept that says, you’ve got to take the bull by the horns, you’ve got to charge ahead and the fortune favors the brave. He uses his own pubs as an example by saying he started 15 Irish Pubs and concepts in the last 6 or 7 years. Three of them failed but now he’s got 12 and he said he’d rather start at 15, have three failed and have 12 left than start at 3 and have none left. He said by replicating the successes of each pub as went forward he was able to model his success of the previous pubs, but he charged ahead at a pace that might frighten a lot of people. So he said, while he remained realistic at the same time he didn’t rationalize his way out of moving forward and growing the business and that was a huge take away for me and certainly impacted how I now started to look at my own business. Any of us could look at our business that way and see how could we charge ahead of business and really power ahead of the competition and stop being afraid of the what if’s and think what if it works out and that was one huge take away for me.

The second was that, a number of speakers all touched on this. My own speech touched on this a bit. Marketing and promotional people were talking about marketing and getting PR for your business, talked about this as well, about community and about building up a sense of community in your business. There was one speaker there, very well known in the Irish pub industry around the world who received a Lifetime Achievement Award at the conference, Mel McNally from McNally Design is the brains behind the Irish Pub Company. The Irish Pub Company set up back in the 80s in association with Guinness and they used to build Irish pubs all around the world.

They would ship the pub in a container to different destinations around the world, send a team there and create the pub from scratch all based on existing Irish pubs in Ireland. What they’ve done over the years, they’ve built more than 600 pubs, they’ve got a very clear vision of what an Irish pub should be and in my opinion, what any pub should be. They have a few key examples of things that really make an Irish pub an Irish pub, things like behind the bar is visible from 80% of the bar. As soon as you come in the door you have to be able to see the bar, there has to be a greeting area, a standing and gathering area near the bar where people can just stand and mingle. It was all based around community and how you must leave space in the bar for community, how you build certain snugs that allow people to mingle together in groups.

Community was a big factor in this, I really recommend you look at how can you foster a community attitude in your business, how do you adopt that community. From my own videos I recommend building a community online and using that as an easy way to contact and connect and take those people offline into your bar, that was a big take away for me , about building community. We’re hearing more and more about it, the harder it gets to make money in a bar or restaurant, the more I’m going to be preaching about how you’ve got to build up this core group of followers who you can keep delivering the goods to and providing the service that they want.

The third and final take away for me from this conference was from Patrick McDermott from Stocktaking.ie an Infantry Control Company, who spoke about knowing every cost in your business. There’s no way you can manage your business if you don’t ever know what the cost is. Take a simple lunch meal that you’re serving, take any meal from your menu today have a look at it and ask yourself, do you know the cost of that? Does anyone in your business know the entire cost of every ingredient? Do you have recipe cards in your business? Do you have what I would refer to as a kitchen bible, which is a breakdown of every ingredient for every dish along with a photograph so that even if the head chef is off duty then the rest of the chefs know what to prepare and what the costs are. So that’s very important. That old adage of to measure is to manage. It really does ring true.

So it was an amazing, amazing conference. I’m delighted that it was such a success and I’m even more excited by the fact that the next Irish Pubs Global Conference is going to be held in New York. I’m going to be part of this conference, I’m going to be helping organize the conference and I’m going to be speaking at the conference and I want every one of you to attend this. It’s going to take place in April 2011 in New York. The dates are yet to be finalized but I’ll certainly be giving more information about that. Whether you own an Irish Pub, a non Irish Pub, a restaurant any kind on food and beverage operation, I recommend you attend the Irish Pubs Global Conference in April. We’re going to have an amazing line-up of speakers. I look forward to sharing that information with you as it becomes available. So until then, the best of luck analyzing the cost of your business and finding ways to build a community.

Cheers!

Cheers!

Guinness, whose best-known advertising campaign proclaimed that its stout “was good for you”, has scrapped the long-standing tradition of providing free drink to blood donors.

Diageo, its parent company, has decided to abandon the tradition of providing complimentary bottles of Guinness to the Irish Blood Transfusion Service (IBTS). “We felt this style and type of donation was not best suited to us now,” said Grainne Mackin, for Diageo. “Guinness has long stopped promoting the product as medicinal and we want to be in full alignment with our voluntary marketing code. It wasn’t driven by any commercial agenda.”

Paddy Bowler, the director of operations at the IBTS, said it considered offering a free Guinness to every donor by buying the drink itself, but decided against it. “The government is going to lower the blood alcohol limits for drivers,” he said. “So we didn’t feel it was appropriate to supply alcohol at the clinics any more, particularly those down the country.”

Instead, blood donors will be offered a cup of tea and a biscuit, or a non-alcoholic drink, along with small tokens such as a pens, key-rings or balloons for their children.

Guinness sales have been declining in Ireland by about 8% a year, so this move probably won’t help consumption!

A crowd of 400 people gathered in the Auld Dubliner Irish Bar’s patio in Tustin, California recently to watch the mammoth 900-lb. glass, made of shatter-resistant acrylic, being filled with 2,772 lbs. of beer. Though it has yet to be certified, the feat should earn the bar a place in the Guinness Book of World Records for world’s largest glass of beer.

Though it hasn’t been confirmed by the bar, rumor has it that it was ordered by a very thirsty Irishman who was willing to wait for it to be poured using the traditional 2-part pour….Impressive.

As any bartender in Ireland will tell you, there is nothing more annoying than a tourist not “getting” how the process of pouring a pint of Guinness works. Though it varies depending on the country it is served in, the correct way to serve Guinness in Ireland (and therefore the rest of the world seeing as everyone claims Irish ancestry) is the two-part pour:

Use a clean normal size pint glass and tilt it to a 45 angle and fill to three quarters full.

Allow the ‘surge’ to settle until there is a clear delineation between the head (which should be about inch, also known as a bishops collar due to it’s size when poured correctly and a light cream colour) at the top. A perfect pint should take 119.5 seconds to pour. Seriously. No joke.

Now fill the glass to the top with a final quarter pint of Guinness.

When pouring from a pump you can draw a lucky ‘shamrock’ shape in the top, although this takes practice and most Irish bartenders/purists would vomit at the thought of this..

Many is the time I had to call back the unsuspecting tourist who had taken their half poured pint so I could top it up and finish it properly. Guinness have always used the “waiting game” as a marketing tool and so their new beermat continues this tradition!

One of the most recognised brands in the world, Guinness is synonomous with Ireland and has been produced in Dublin since 1759. Here are 21 facts you might not have known about the “pint of plain”

(compliments of http://www.guinnessgearonline.com)

1. 2009 is the 250th Anniversary of Guinness.

2. St James Gate was not the original site for the brewery. Arthur Guinness began brewing beer in Leixlip, a town in County Kildare.

3. In 1759 he moved to an empty St. James’s Gate Brewery in Dublin, Ireland. A bigger brewery in a bigger city for bigger production of a great product!

4. The St. James’s Gate Brewery was leased for 9000 years at an annual fee of £45, or $65 USD! This lease INCLUDED fresh water rights. Imagine paying only $65 for rent for a year on anything, let alone a large brewery!! The fresh water rights caused problems with the Dublin Corporation, who wanted to charge a levy. This created quite a stir, and production was halted for a brief time while labourers blocked the water supply to the brewery. In the end, lucky for us, Guinness kept their fresh water rights as outlined in his lease.

5. Ten years later, in 1769, Guinness exported six and one half barrels of beer to England, their first exportation. This brought awareness of the product to a whole new market. As people emigrated to the new world, they would of course take their favorite brew with them.

6. By 2001, almost 2 billion pints a year were sold world wide.

7. Over the years, much slang has come about when ordering a pint of Guinness and here a few ways you can order one for yourself!

- “Arthur G”

- “Pint of black stuff”

- “Arthur Scargill”

- “Pint of plain”

8. Did you know that contrary to popular beliefs, Guinness does not contain oatmeal! It actually contains roasted malted barley, hops, yeast, and water. Also, the beer is not black, but actually a dark ruby red.

9. Guinness exports were banned from 1944-1947. Luckily, the ban was lifted and exports continued.

10. Guinness is the best selling drink in Ireland.

11. In 2006, Canada was the fastest growing Guinness draught market in the world. There are so many Canadians with Irish ancestry that the numbers are sure to keep climbing.

12. In 2006, more Guinness was sold in Canada than in Ireland.

13. Guinness is brewed in more than 150 countries worldwide, including Nigeria and Indonesia.

14. 40% of all Guinness sales are in Africa. When the weather’s that hot, you could use a few pints to cool down.

15. Over 10 million glasses are sold every day. Are you doing your share?

16. Currently all Guinness sold in the United Kingdom is produced at St. James Gate.

17. Breweries in Kilkenny and Dundalk will close in 2013. There was controversy in 2007 when discussion of closing the St. James Gate location arose. Despite the discussions, Guinness is staying put with renovations at the current location underway.

18. Renovations are estimated to cost $1 Billion USD. I’m sure they can afford it since their lease is only $65!!

19. “Guinness is Good For You” slogan is still used in many places worldwide. Some research does support Guinness has heart health benefits. Guinness now officially states they make no health claims.

20. Guinness contains only 198 calories per pint. That is less than most light beer, wine, OJ, or even light milk. Forget going on a diet- have a few pints!

21. The perfect pour should take 119.50 seconds. It is a result of a double pour at a 45 degree angle. The result a creamy head on a smooth dark beer served at 6 degrees Celsius. Next time you order a pint, time your bartender to make sure that you’re getting the best pint possible.

Slainte! (Good Health!)
