Very true and their harsh lighting makes us want to leave as soon as we finish, helping them turn the table over again and again. I remember hearing once that the original McDonalds model banned music and comfortable seats in their restaurants lest the customers get comfortable!

Good move, color and lights are know to affect the human psychology and create or influence thinking paterns. Take a look at fast food outlets like KFC or Pizza Hut and they go for red, orange and yellow which stimulates the spend.
